Growing guide
- Sowing
For mature roots and greens, sow seed outside as soon as soil can be worked in spring or in late summer for a fall crop. Plant seed 2” apart, cover with ½” fine soil and water well.
- Thinning
When plants are 3–4” tall, thin to 5–6” apart. Eat your thinnings in a salad!
- Germination
14–21 days depending on soil temperature and moisture.
- Remarks
Each beet seed (truly a cluster) can produce 2–3 seedlings which makes them perfect for micro-greens. When sowing for micro-greens, allow ½” between each seed, press the seeds firmly into the soil and cover with a paper towel. Water daily through the towel until the seeds germinate. Harvest at the seedling stage.
